If you are not an Australian resident you need permission from the Australian government to work in Australia. If you are between 18 and 30 years old you can apply for a working holiday visa. Working holiday visa, gives you the opportunity to work and stay in Australia for up to 12 month. You are only allowed to work for the same employer up to six months in a row.
Backpackers generally gain casual employment meaning you are paid by the hour rather than week or fortnight. Looking for work through agencies and advertised positions can gain results however nothing seems to beat a few days handing out your resume/cv to prospective employers.

So by taking a reduced pay for to receive cash/black money you can loose out big time in the long run by missing out on a tax return and superannuation! You may have to declare these wages to you tax department when you return home. Not to mention, holiday pay, sick days and your pension payments that you can claim back when you leave.
